Chicken and Pumpkin Congee
Pumpkin dissolves into the rice as it simmers, turning the congee a soft orange and lending a gentle sweetness that sits behind shredded chicken and a little ginger.
About this dish
The pumpkin does most of the work here. Cut small, it breaks down over a long, low simmer and stains the rice a warm orange that no spice can fake. The smell turns earthy and faintly sweet as it cooks, and ginger keeps the bowl from tasting flat. Shredded chicken goes in late so it stays in fine strands instead of turning stringy. Aim for a texture that coats a spoon and slides off slowly, with no water pooling at the edge.

Method
6 steps · tick each one off as you finish it.
Start the rice
Combine 180 g rinsed rice and 1400 ml water in a pot over high heat and bring to a boil in 8 minutes, stirring once, until the grains churn and a line of foam gathers at the rim.
Add the pumpkin
Stir in 250 g pumpkin cubes and 1/2 tsp salt, drop the heat to low, cover with the lid ajar and simmer for 25 minutes, stirring every 8 minutes, until the cubes collapse when pressed.
Mash and smooth
Crush the softened pumpkin against the side of the pot with a spoon over low heat for 2 minutes until the congee turns an even orange and no distinct cubes remain, then keep it at a bare simmer.
Poach the chicken
Slip 200 g chicken strips into the pot over medium-low heat and stir gently for 6 minutes until the pieces turn opaque and separate into fine strands, skimming off any grey scum that rises.
Season and rest
Add 1 tbsp soy sauce, 1 tsp ginger and 1/4 tsp white pepper, simmer over low heat for 4 minutes until the sharp soy edge softens, then switch off and rest covered for 3 minutes.
Serve
Ladle into 3 bowls, add 1 tsp sesame oil and 30 g scallions, rest for 1 minute, then serve when the surface is still steaming hot and a dragged spoon leaves a channel that closes slowly.
Tips that matter
- Cut the pumpkin small so it fully dissolves; large chunks stay intact and leave pale pockets in the orange base.
- Add the chicken only at the end, because a long boil tightens the strands and makes them feel dry.
Easy variations
- Swap the pumpkin for 250 g diced sweet potato and add 1 tsp grated orange zest off the heat.
- Stir 60 g cooked sweetcorn in with the chicken for pops of sweetness and a brighter colour.
Questions that come up
Why is my congee watery?
It needs more uncovered simmering. Keep the lid ajar over low heat for a further 8 minutes, stirring, until a spoon leaves a slow trail; the rice will keep releasing starch as it cooks.
Can I use leftover roast chicken?
Yes. Shred 150 g and stir it in during the last 2 minutes over low heat just to warm through, since it is already cooked and will toughen if simmered for the full 6 minutes.
