About this dish

The enemy of a grilled cheese is a pan that is too hot; the bread browns long before the cheese has given up its shape. Set the heat to medium-low, butter the bread all the way to the crust, and give the sandwich a slow five minutes a side with a gentle press. You will hear a quiet, even sizzle rather than an angry crackle. Done right, the crust shatters lightly under the knife and the cheese pulls into strings instead of leaking out.

Method

7 steps · tick each one off as you finish it.

  1. Grate and butter

Grate 120 g cheddar and 30 g mozzarella and toss them together in a bowl. Butter the 4 slices of 180 g bread right to the crust with 40 g softened butter, covering every corner so they brown evenly.

  2. Assemble

Spread 1 tbsp mustard over 2 of the slices, pile 75 g of the cheese on each and cap with the remaining bread, buttered side up. Press down gently; each sandwich should sit about 2 cm thick and feel compact.

  3. Heat the pan

Set a heavy skillet over medium-low heat for 2 minutes and add 1 tsp neutral oil. A breadcrumb dropped in should sizzle gently and slowly, not smoke or spit; if the pan is too hot, pull it off the heat for 20 seconds.

  4. Griddle the first side

Lay one sandwich in the pan and cook for 4 to 5 minutes without moving it. The underside is ready when it is deep golden and crisp, and the cheese at the edges has just begun to soften and glisten.

  5. Flip and finish

Sprinkle 1/2 tbsp parmesan over the top, flip, and cook 4 to 5 minutes more, pressing once with a spatula. It is done when both sides are evenly browned and the cheese stretches into strings when a corner is nudged.

  6. Hold and repeat

Keep the first sandwich warm in a 90 °C oven while you wipe the pan and cook the second the same way, 4 to 5 minutes per side. The held sandwich should stay crisp rather than steaming soft.

  7. Rest and cut

Rest both sandwiches 1 minute, then cut each diagonally with a sharp knife. The crust should crackle lightly under the blade and the cheese pull into long strands; serve immediately while the centres are still hot and soft.

Tips that matter

  • Grate the cheese yourself; pre-shredded cheese is coated in starch and does not melt into smooth strings.
  • Keep the heat at medium-low; if the bread is brown before 4 minutes, pull the pan off the heat for 20 seconds.

Easy variations

  • Add 30 g caramelised onion or 2 sliced mushrooms between the cheese layers.
  • Use 30 g blue cheese with half the cheddar for a sharper, tangier filling.

Questions that come up

Why is the bread burnt but the cheese still firm?

The pan was too hot. Drop to medium-low, cover the pan for the first 2 minutes to trap heat, and give it longer.

Which bread works best?

A sturdy white or sourdough with a tight crumb; very airy bread lets the cheese leak and soft sandwich bread turns limp.
