Lotus Seed and Brown Rice Congee
Brown rice and soaked lotus seeds simmer into a nutty, faintly sweet porridge; ginger cuts the earthiness, goji berries add small tart bursts, and the grains stay distinct rather than collapsing into paste.
About this dish
Brown rice behaves differently from white rice in congee: the bran holds its shape, so the bowl stays chewy instead of turning silky. Lotus seeds need an overnight soak, and once soft they carry a chestnut sweetness with a chalky edge at the centre. The smell rising from the pot is closer to toasted bread than plain rice. Keep the flame low and the lid ajar, since a hard boil splits the grains and thickens the liquid into glue. Listen for a slow blup every second or two.

Method
7 steps · tick each one off as you finish it.
Soak and rinse
With the pot off the heat, drain 60 g soaked lotus seeds and rinse 180 g brown rice until the water runs clear, about 2 minutes. You will know the rice is ready when the runoff looks like plain water, not milky starch.
Bring to the boil
Tip 180 g rice into a heavy pot with 1500 ml cold water and 15 g ginger coins, then set it over high heat for 9 minutes. Wait until bubbles break the surface and the grains lift instead of sitting still.
Lower the flame
Turn the heat down to low, add 60 g lotus seeds and 1/2 tsp salt, and leave the lid tilted for 40 minutes, stirring every 10 minutes. You will know it is right when a seed splits under a spoon and smells of chestnut.
Sweeten
Stir in 30 g rock sugar and the 2 tbsp goji berries, keeping the heat at its lowest for 8 minutes. The moment to move on is when the sugar has vanished, the berries have plumped, and the congee falls from a spoon in a slow ribbon.
Loosen and rest
Take the pot off the heat and beat in 120 ml just-boiled water, a splash at a time, for about 1 minute. You will know the texture is right when a spoon drawn through the surface leaves a trail that closes slowly, not instantly.
Fish out the ginger
Still off the heat, lift out the 15 g ginger coins and let the pot stand covered for 5 minutes so the steam settles. It is ready to ladle when the top looks glossy and no thin skin has formed across the surface.
Serve
With the pot off the heat, ladle into four bowls, dust each with 1 tsp muscovado sugar and the 1 tbsp sesame seeds, and serve within 3 minutes. It is right when the surface steams and the seeds sit dry on top.
Tips that matter
- If you skip the overnight soak, add 20 minutes to the low simmer and expect the lotus seeds to keep a firm, chalky centre rather than splitting.
- Congee thickens as it cools; loosen leftovers with 60 ml hot water per bowl over low heat instead of adding cold liquid, which makes the starch seize.
Easy variations
- Swap 40 g of the brown rice for sweet brown glutinous rice if you want a softer, stickier bowl that holds together on a spoon.
- Stir 2 tbsp of cooked red beans in with the goji berries for a darker, fruitier sweetness and a deeper purple-brown colour.
Questions that come up
Why is my brown rice congee still thin after an hour?
Brown rice releases starch more slowly than white rice. Keep the lid tilted rather than fully on, crush a few grains against the pot with the back of a spoon, and simmer 10 minutes more; it will thicken as the bran breaks down.
Can I make this in a rice cooker?
Yes, on the porridge setting with the same 1500 ml water and the ginger added at the start. Add the goji berries and sugar only after the cycle ends, then let it sit on warm for 10 minutes so the berries plump.
