About this dish

This is the bowl for one pan and very little time. Order matters: egg goes in first and comes out still soft, sausage follows so its fat renders into the wok, then the noodles meet that oil. Everything moves over high heat, done in a few noisy minutes. Listen for the sausage to hiss and the egg to puff; the smell turns smoky and faintly sweet. The noodles pick up a light soy glaze at the end, staying springy with browned, lacy spots rather than a soft mass.

Method

7 steps · tick each one off as you finish it.

  1. Parboil the noodles

Boil 300 g noodles in a pot over high heat for about 2 minutes, until just loosened and still firm. Drain thoroughly, toss with 1 tbsp oil off the heat and spread them out; the strands should look glossy and separate, never wet.

  2. Mix the glaze

Whisk 2 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar and 1 tsp sesame oil in a bowl, off the heat, for 20 seconds. This is the point to stop: the sugar dissolves and the glaze looks an even, glossy brown.

  3. Soft-scramble the egg

Heat a wok over high heat with 1 tbsp oil and pour in 110 g beaten egg. Let it sit 10 seconds, then scramble for 40 seconds until the curds are just set and glossy; tip them onto a plate before they brown.

  4. Render the sausage

Add 180 g sausage coins to the same wok over medium-high heat and fry for 2 minutes, stirring once. They are ready once the edges curl and caramelise, the fat has rendered into the pan and a smoky, sweet smell rises.

  5. Wilt the greens

Add 20 g garlic and 80 g greens and stir-fry over high heat for 90 seconds. Stop when the garlic is pale gold, the greens have just wilted to a bright, deep green and no raw, sharp smell remains in the wok.

  6. Glaze the noodles

Return the noodles and pour the glaze around the rim of the wok, then toss over high heat for about 90 seconds. Look for this: the strands are evenly tawny, the sauce clings rather than pools and you hear a faint dry crackle.

  7. Reunite and serve

Slide the wok off the heat, return the egg curds, add 40 g scallions and fold for 30 seconds. The cue is simple: the egg stays in soft, distinct curds, the sausage is glossy and the scallions remain bright; serve at once.

Tips that matter

  • Cook the egg first and set it aside; adding it at the start leaves you with grey, rubbery curds by the time the noodles are done.
  • Drain the noodles very well. Even a few tablespoons of water will steam the wok and stop the strands from catching those browned, lacy spots.

Easy variations

  • Use 180 g sliced cooked chicken or spam in place of sausage, reducing the fry to 90 seconds.
  • Add 1 tsp chilli crisp to the glaze for a warmer, spicier plate without changing the method.

Questions that come up

Why are my noodles sticking together?

They were wet or the wok was not hot enough. Drain well, oil them, and let the pan heat for a full 2 minutes over high heat before anything goes in.

Can I use dried noodles?

Yes. Boil them 1 minute short of the packet time, drain and oil them. They absorb the glaze faster, so toss for 60 seconds rather than 90.
