Rice Cooker Potato Rice
Waxy potato cubes browned with garlic, then steamed over soy-and-sesame jasmine rice in a rice cooker until the bottom grains turn faintly crisp and the scallions stay bright.
About this dish
Plain rice cooked with potato is quiet food, but it rewards attention at the start. Browning the cubes in a hot skillet gives them a thin golden crust and a nutty smell that raw potato never develops, and that crust holds through the steam. The cooker does the rest: you hear the water settle into a low burble, then the softer tick of the last moisture being absorbed. What comes out is two textures in one pot, fluffy grains above and a few crisp, soy-coloured ones at the base.

Method
7 steps · tick each one off as you finish it.
Rinse the rice
Rinse 270 g of rice in a sieve off the heat for 60 seconds until the runoff runs clear, then drain 2 minutes. The moment to move on is when the grains look chalky and no milky water drips from the sieve.
Season the potato
Pat 300 g of potato cubes dry and toss them with 1 tbsp of oil and 1/2 tsp of salt in a bowl off the heat for 30 seconds. They have had enough when every face carries a thin, even sheen.
Brown the cubes
Warm a skillet over medium heat for 60 seconds, add 20 g of garlic and the potato, and cook 5 minutes, turning twice. You can tell it is ready when the cube edges turn golden and you smell a nutty, buttery aroma.
Load the cooker
Tip the drained rice into the rice cooker with 320 ml of water, 1 tbsp of soy sauce and 1 tsp of sesame oil over the low heat setting for 10 seconds. Ready once the liquid sits level with the grains.
Run the cycle
Scatter 300 g of browned potato and garlic over the rice without stirring, close the lid and run the standard cycle for 30 minutes on automatic heat. You will see it is ready when the switch clicks and steam thins at the vent.
Rest and drizzle
Rest the pot off the heat for 10 minutes with the lid on, then drizzle 1 tbsp of soy sauce over the surface for 20 seconds. Move on when the grains at the base lift away cleanly and the potato cubes hold their shape.
Fold and serve
Fold in 40 g of scallion and 1 tsp of sesame seeds off the heat for 30 seconds until the green flecks are evenly spread. It is ready to serve when the rice is fluffy and a few crisp golden grains cling to the bottom.
Tips that matter
- Use waxy potato rather than a floury one; firm cubes keep their 2 cm edges through the 30-minute cycle instead of dissolving into the rice.
- Browning the potato first matters, since the raw cubes would simply steam and taste flat against the soy-seasoned grains.
Easy variations
- Add 80 g of diced carrot with the potato over medium heat for 4 minutes to bring a faint sweetness and orange flecks.
- Stir 1 tsp of chilli oil into the finished rice off the heat for a warm, red-tinted finish.
Questions that come up
Why are my potato cubes still firm?
They were cut too large or sat on top of the rice. Keep them at 2 cm and press them halfway into the liquid so they steam through in the same cycle.
Can I make this without a rice cooker?
Yes, use a heavy pot: bring 320 ml of water to a boil, cover and simmer on the lowest heat for 18 minutes, then rest 10 minutes off the heat.
