Soft Rice with Beef and Potato

Rice simmers long with thin beef slices and potato cubes until the grains swell soft and the starch thickens the broth, giving a spoonable bowl where the potato edges dissolve into the sauce.

About this dish

This is the bowl I make when the rice needs to be gentler than usual. Extra water lets the grains burst at the edges, so the broth turns milky and clings to the spoon. Potato does quiet work here: after twenty minutes its corners slump and melt, thickening everything without flour. Beef goes in thin and late, just long enough to lose its pink. The smell is warm soy and onion, the sound a slow, thick bubbling rather than a rolling boil.

Method

6 steps · tick each one off as you finish it.

  1. Prep rice and beef

Rinse 200 g rice in cold water for 30 seconds, drain, and repeat twice until the water runs clear. Toss 220 g beef with 2 tsp cornflour and 1/2 tsp white pepper off the heat for 1 minute until every slice is lightly coated.

  2. Build the broth

Heat 1 tbsp oil in a pot over medium heat for 1 minute until it shimmers. Add 1 tsp ginger and stir 30 seconds over medium heat until the sharp smell softens, then pour in 900 ml water or stock.

  3. Simmer rice and potato

Bring to a boil over high heat, add 200 g rice and 260 g potato, then drop to low heat and simmer 20 minutes until the potato corners round off and the surface bubbles slowly and thickly.

  4. Add carrot and season

Stir in 100 g carrot and 1 tbsp soy sauce over low heat and simmer 10 minutes until the carrot turns translucent at the edges and the broth coats the back of a spoon. Stir every 3 minutes so the rice does not catch.

  5. Poach the beef

Lay 220 g beef slices on the surface over low heat, without stirring, for 3 minutes until each slice turns grey-brown and the broth returns to a bare simmer. Fold them in gently for 30 seconds until no pink remains.

  6. Rest and serve

Turn off the heat, scatter 60 g scallions over the pot and rest 5 minutes off the heat until the green wilts and the rice settles into a soft, spoonable mass. Serve in deep bowls within 10 minutes.

Tips that matter

  • Cut the beef across the grain and keep it thin; thicker slices turn rubbery in the short time they spend in the broth.
  • If the pot thickens too far before serving, loosen it with 100 ml hot water over low heat rather than cold, which would stiffen the starch.

Easy variations

  • Swap the beef for 200 g skinless chicken thigh, sliced thin, and simmer 2 minutes longer.
  • Add 80 g diced tomato with the carrot for a brighter, slightly tart broth.

Questions that come up

Why did the bottom scorch?

The heat was too high once the starch released. Keep it at a bare simmer from the moment the rice goes in, and stir every 3 minutes, scraping the base with a wooden spoon.

Can I make this in a rice cooker?

Yes, but reduce the water to 700 ml and add the beef only after the cycle ends, letting it sit 5 minutes in the residual heat.
