Soft Rice with Red Date Paste
Dried red dates are steamed and blended into a dark, jammy paste, then folded through extra-soft rice so each spoonful carries a gentle caramel sweetness without any added refined sugar.
About this dish
Steaming dates changes them completely: the wrinkled skins split, the flesh turns almost black, and the smell shifts from dusty to burnt caramel and stewed apple. I blend them hot with a spoonful of their steaming water until the paste falls from the spatula in a slow ribbon. Stirred through rice cooked with extra water, it stains the grains faint mahogany rather than coating them. Goji berries and sesame on top give a small tart pop against the deep sweetness.

Method
6 steps · tick each one off as you finish it.
Steam the dates
Rub 1 tsp oil over a heatproof plate, spread 200 g dates on it and steam over high heat for 15 minutes until the skins split and the flesh looks glossy and nearly black. Keep 180 ml of the steaming water.
Blend the paste
Tip the hot dates into a blender with 180 ml steaming water and 1/4 tsp salt, and blitz 60 seconds off the heat until the paste falls from a spatula in a slow ribbon and no skins remain visible.
Cook the soft rice
Rinse 240 g rice for 30 seconds, drain, and repeat twice until the water runs clear. Put it in a rice cooker with 900 ml water and start the porridge cycle on medium heat for 30 minutes until the grains swell soft.
Check the texture
Lift the lid after 30 minutes and stir 240 g rice for 1 minute over low heat until the surface looks creamy and a spoon leaves a slow-closing trail. Rest 5 minutes off the heat until the bubbling settles to a whisper.
Fold in the paste
Spoon 200 g date paste over the rice and fold for 2 minutes over low heat until the grains turn faint mahogany and the paste smells of caramel rather than raw fruit. Leave a few streaks visible rather than blending it smooth.
Garnish and serve
Scatter 20 g goji berries and 2 tsp sesame seeds over the top off the heat and rest 3 minutes until the berries plump and the seeds smell toasted. Serve warm in shallow bowls within 10 minutes.
Tips that matter
- Pit the dates before steaming; a single stone left in will stall the blender and leave a bitter note in the paste.
- Blend while the dates are hot, since cold dates seize into a stiff mass that will not ribbon off the spatula.
Easy variations
- Stir 60 g cooked black rice into the finished bowl for a chewier, darker contrast.
- Add 1 tsp grated ginger to the blender for a warmer, faintly spicy paste.
Questions that come up
Can I use ready-made date paste?
Yes, but warm 200 g of it with 60 ml water first; jarred pastes are denser and will sit in heavy lumps instead of streaking through the rice.
Why is my rice firm rather than soft?
The water ratio was too low or the cycle too short. Use 900 ml for 240 g rice and choose the porridge setting, then rest 5 minutes before folding.
